Description
Overview: A Sushi Chef at The Moore is responsible for preparing high-quality sushi dishes in accordance with established recipes and standards. This role requires precision, attention to detail, and a deep understanding of Japanese culinary techniques. A successful Sushi Chef should be knowledgeable about sushi ingredients, possess excellent knife skills, and be able to work efficiently in a fast-paced kitchen environment.
Responsibilities:
- Sushi Preparation:
- Prepare sushi rice according to established recipes and standards.
- Cut, slice, and portion various types of fish and seafood for sushi dishes.
- Prepare sushi fillings, such as vegetables, tofu, and seafood, ensuring freshness and quality.
- Create aesthetically pleasing sushi rolls, nigiri, and sashimi.
- Ensure that all sushi dishes meet the highest standards of quality, freshness, and presentation.
- Monitor and maintain freshness of ingredients, including fish, seafood, vegetables, and rice.
- Adhere to food safety and sanitation guidelines to prevent cross-contamination and ensure food safety.
- Maintain a clean and organized workstation, including proper storage of ingredients, tools, and equipment.
- Assist with inventory management, including ordering and stocking sushi ingredients as needed.
- Ensure that all kitchen equipment is properly maintained and in good working condition.
- Teamwork and Collaboration:
- Work closely with other kitchen staff members to ensure smooth operation of the kitchen.
- Communicate effectively with servers and other front-of-house staff to fulfill customer orders accurately and efficiently.
- Collaborate with the sushi team to coordinate preparation and presentation of sushi dishes during busy service periods.
Requirements
- Culinary Skills:
- Proven experience as a sushi chef.
- Excellent knife skills and proficiency in sushi preparation techniques, including rice cooking, fish handling, and sushi rolling.
- Strong understanding of food safety and sanitation practices, including proper handling and storage of raw fish and seafood.
- Knowledge of HACCP principles and regulations is preferred.
- Ability to pay close attention to detail and maintain high standards of quality and presentation.
- Strong organizational skills to manage multiple tasks and prioritize work effectively.
- Ability to work collaboratively as part of a team in a fast-paced kitchen environment.
- Effective communication skills to coordinate with other kitchen staff and front-of-house team members.
- Willingness to work evenings, weekends, and holidays as required in a restaurant setting.
- Ability to adapt to changing priorities and handle pressure during busy service periods.
- Education and Certification:
- High school diploma or equivalent is required.
- Formal culinary training or certification from a culinary school is preferred.
- Certification in food safety and sanitation is an advantage.
Physical Requirements
- Ability to stand for extended periods.
- Manual dexterity for precise knife work and assembling delicate sushi rolls.
- Ability to lift heavy objects, such as bags of rice and crates of ingredients.
